Peanut Butter Banana Smoothie



I'll be the first to admit that I'm no fitness buff.  I like food way to much to allow myself to be too thin or overwhelmingly fit.  But a few days ago I was coerced into attending a spinning class.  I don't mind running.  I'll do pilates.  I've even been known to swim a few laps.  But spinning is a totally different monster.  I attended another spinning class a few weeks ago and loved it...turns out it was the spinning class for weak-hearted losers - the "Endurance Class".  We sweated and pedaled away for forty-five minutes.  Done and done.  No problem.  I'm not exactly sure what this class I went to most recently was called, but I think it was something like, "You're-About-to-Poke-Your-Eyes-Out Class", or maybe the, "I-Hope-You-Weren't-Planning-to-Sit-Down-Again-For-a-Week-or-Two Class".  It was super hard.  I drained my water bottle in the first twenty minutes.  At one point I think I may have been having some sort of asthma attack. 

I'm getting off subject.  What I'm trying to say is that when I got home, the microscopic portion of spagetti that was left over was simply not going to cut it.  That's when I remember this pin on my Pinterest food board.  The woman swore it tasted like ice cream.  Sign me up.  Her pictures are much more beautiful, so you should go check her blog out, but I followed her recipe to the T, and ended up with something magnificent.  It really did taste like ice cream.  All peanutbuttery and banana-y and delicious.  Here's the recipe:
2 Bananas, pre-cut up and frozen
(the more ripe they are before freezing, the better)
1/4 cup whole oats
1/4 cup peanut butter (I used natural, chunky pb)
3/4 cup milk (I used 1%)

Blend the oats first, until they are powdery.  Add the remaining ingredients and blend 'er up!  So.  Incredibly.  Good.  Especially if you think you may be starving to death...

Go try it out!  Fantastically good AND pretty great for you.

  3. Just got around to checking your blog, and I have to say: you fooled me into thinking that the spin class didn't make you want to die. So, good job? Also..that smoothie looks deeee-licious
